Northwood University Students Finalizing Plans for NU-Opoly-Themed Fundraiser at Apple Mountain Resort

Northwood University students are putting the final touches on the 51st Stafford Dinner, a one-of-a-kind dining experience featuring a life-size NU-Opoly game, live entertainment, silent auction, and keynote address from Food Network champion Chef Dominique Leach on Feb. 28 at Apple Mountain Resort in Freeland.

“The Stafford Dinner is the signature event of our hospitality management program, and it exemplifies the experiential learning that sets Northwood apart,” said Adviser Karla Spaeth-Yost. “Our students gain invaluable real-world experience in event planning, food service, marketing, and hospitality management — skills that will serve them throughout their careers. This event is a testament to their professionalism and commitment to excellence, and all proceeds create scholarships for future hospitality students.” 

The evening will showcase a gourmet multi-course dinner prepared and served by Northwood’s hospitality students. Guests can participate in NU-Opoly throughout the night while enjoying live entertainment from Cool2Duel, a dynamic pianist duo known for bringing high-energy performances to every event. 

The evening’s keynote speaker, Chef Dominique Leach, owns Chicago’s renowned Lexington Betty Smokehouse. As an award-winning pitmaster who has competed internationally, Chef Leach brings a unique perspective on culinary excellence and entrepreneurship to the hospitality industry. Her talent and entrepreneurial spirit have earned her national recognition, including her 2023 victory on The Food Network’s BBQ BRAWL with Bobby Flay, appearances on CHOPPED and Food Network Canada’s FIREMASTERS as both judge and contestant, and recognition by Good Morning America as serving the “Best Barbecue in Chicago.”

“This year’s Stafford Dinner represents months of hard work and dedication from our entire executive board,” said General Chair Mason Skaff of Fenton. “We’re excited to bring the community together for an evening that showcases not only our hospitality skills but also the incredible talent of Chef Dominique Leach and the energy of Cool2Duel. The NU-Opoly game will add a fun, interactive element that makes this year truly special.” 

The silent auction will feature premium items and experiences, giving guests opportunities to take home exceptional prizes while supporting the next generation of hospitality leaders. 

In addition to Skaff, this year’s executive board includes Maria Achenbach of Waldron (decorations chair); Emberlin Powell of Birch Run (entertainment and registration chair); Joseph Eisenman of Midland and Jacob Lemmer of Bay City (food and beverage co-chairs); Morgan Bryce of Birch Run (procurement chair); Taylor Brown of Birch Run (logistics and fundraising chair); Lila Bolden of Petoskey (marketing and public relations chair); and Edson Ramirez of Lima, Peru (service chair). Attendees also will be able to purchase a limited-edition Northwood-branded Monopoly-style game designed by this year’s Stafford Dinner organizers to raise funds for hospitality scholarships.

The 51st Stafford Dinner takes place Feb. 28 at Apple Mountain Resort in Freeland. Registration will start at 4:30 p.m., followed by a reception at 5 p.m and dinner at 5:30. Tickets are available online through Saturday, Feb. 21.
