Jane Young Wallace

Jane Young Wallace was editor/publisher emeritus of Restaurants & Institutions Magazine, the leading foodservice industry publication. Ms. Wallace became editor-in-chief in 1968 and publisher in 1989. She retired from full-time participation in 1994 but remained a vice president. In addition, she served on the quality assurance team that audited Cahner’s Publishing’s 80+ publications for editorial excellence. Ms. Wallace was active in many foodservice associations and a frequent speaker at industry meetings. She often served as a spokesperson for the foodservice industry for the consumer media. Jane Wallace served as chairman of the editorial division of the Associated Business Press. She edited several professional cookbooks and was the author of the restaurant listing for World Book Encyclopedia. She was a founder of the Ivy Society of Distinguished Restaurateurs, a charter member of the Chicago chapter of Les Dames d’Escoffier, an honorary member of the Distinguished Restaurateurs of North America Hall of Fame and of the American Dietetic Association, a National Restaurant Association Education Foundation Diplomate and a trustee of the Culinary Institute of America. She was chosen Woman of the Year by the Roundtable of Women in Foodservice and received a Lifetime Achievement Award from the Society for the Advancement of Foodservice Research. In 1990, she was awarded an honorary Doctor of Letters degree by Johnson and Wales University. (Deceased 1996)
