Eric started his food service career as a student employee with West Virginia University, in Morgantown, WV. Working in campus dining, Eric trained under six Certified Executive Chefs. He quickly became a student manager and student property manager while attending WVU. As a Property Manager Eric handled over $2 million a year in capital improvement projects at two high rise locations. He spent his summers working in hotel / resort management, taking part in numerous remodeling projects around the country (most notably Bedford Springs Resort in Bedford, PA). Eric graduated with degrees in Political Science and History. After Graduating he designed, opened, and operated three Starbucks coffee shops for WVU. Eric then became Residential Operations Director at Frostburg State University, in this capacity Eric led the dining program to a period of immense success, serving over 18,000 meals a week and maintaining a high level of customer satisfaction. Eric took part in many remodeling projects and won numerous awards for his fresh ingredient approach to dining. Eric designed three unique retail concepts while remodeling the food court at Frostburg, a $23 Million project. Eric then moved to Augusta, GA, where he was the food service director for a small Christian college. Serving a student population of around 1,000 with a retail operation as well as a dining hall. While there Eric was highly involved in high end catering for the Master’s Golf Tournament and numerous weddings. Most recently, at Marshall University, Eric ran the catering department. Building the program into the top 7% in the nation, with over 300 weddings under his belt. Overseeing various retail projects and assisting with Dining Hall operations, as well as maintaining a catering operation of $1.3 Million a year.
